			<content:encoded><![CDATA[<div class="pf-content"><p>Pour compléter le menu de chaque semaine, nous devons préparer l&#8217;apéritif ! Tous les élèves doivent en préparer un. Cela suppose, la recherche de la recette, l&#8217;achat des éléments et la préparation lors du cours.</p>
<p>Les deux premières semaines, c&#8217;est Jean, notre professeur &amp; chef qui était de corvée. Mais depuis, nous faisons une rotation avec les autres élèves. Donc cet article sera réservé aux apéritifs !</p>
<p>Je n&#8217;ai pas pour l&#8217;instant les recettes de tous les apéritifs réalisés. Donc un peu de patience, ça arrive ! Petite info avant de démarrer, un flûte fait en moyenne 120 ou 150 ml, donc faire attention aux quantités données. C&#8217;est soit pour un verre ou souvent 6 verres. Il est aussi plus facile de mélanger une partie des liquides à l&#8217;avance, de mettre la préparation au froid et de finir l&#8217;assemblage juste avant de servir.</p>
<p><span style="text-decoration: underline;"><em><strong>WEEK 11 &#8211; Bellini aux cerises</strong></em></span></p>
<ul>
<li>45 ml ( 1 1/<span class="unit-converter-help" title="56.7 grams">2 oz</span>) de vodka</li>
<li>15 ml (1/<span class="unit-converter-help" title="56.7 grams">2 oz</span>) de liqueur de cerise</li>
<li>150 gr de sucre</li>
<li>Mousseux</li>
</ul>

<p>Dans une flûte refroidie, déposer une cerise confite, verser la vodka et  la liqueur de cerise et le sucre (faire le mélange séparément).  Incorporer le mousseux et de la glace pilée avant de servir.</p>
<p><span style="text-decoration: underline;"><em><strong>WEEK 8 &#8211; Cocktail au curaçao</strong></em></span></p>
<ul>
<li>10 cl de curaçao</li>
<li>25 cl de rhum blanc</li>
<li>10 cl de jus de citron vert</li>
<li>le jus d&#8217;un 1/2 citron jaune</li>
<li>Sucre coloré</li>
</ul>
<p>Mélanger le curaçao, rhum et le jus de citron vert (filtré). Décorer  le bord du verre (préalablement trempé dans le jus de citron jaune) avec  le sucre coloré. Verser le mélange dans le verre avec de la glace  pilée.</p>

<p>Pour le sucre coloré, il existe plusieurs solutions. Moi, j&#8217;ai choisi le sucre de la marque <a href="http://www.zuk-zak.com/" target="_blank">ZUK &#8211; ZAK</a>.Il se présente en bouteille de 450 gr de sucre coloré.<a href="http://www.parcourscuisine.be/wp-content/uploads/2010/11/bouteilles.jpg" rel="lightbox[623]"><img class="alignright size-thumbnail wp-image-647" title="bouteilles" src="http://www.parcourscuisine.be/wp-content/uploads/2010/11/bouteilles-150x150.jpg" alt="" width="150" height="150" /></a></p>
<p>Petit bémol lors  de mon apéritif, les grains de sucre sont trop gros et ne tiennent pas  sur le bord du verre.</p>
<p>Il faut le passer au mixer pour réduire la texture  et avoir de la poudre de sucre.</p>

<p>A la base c&#8217;est un Japanese Slipper : Liqueur de melon, cointreau, jus de citron et une cerise Maraschino. Même quantité.Comme je n&#8217;ai pas trouvé de liqueur de melon, j&#8217;ai fais un mélange de liqueur de kiwi et liqueur de banane ( Pisang).</p>

<p>Santorini Sunrise : c&#8217;est un mélange de vodka pamplemousse, campari, jus de pamplemousse, menthe, miel. Comme j&#8217;ai pas trouvé de la vodka pamplemousse, j&#8217;ai utilisé de la liqueur de pamplemousse, vodka et jus de pamplemousse. Pour le reste, ajouter un bouquet de menthe, du miel et des morceaux de pamplemousse. Laisser mariner quelques heures au frigo. Filtrer et servir. Donc pas de Campari.</p>
